Playing with live yeast can be tricky , so far i have few not so successful bread experiments with live yeast. This time good Lord was on my side and finks went pretty damn good. Googled a few recipes and at the end come out with my version of the so called " traditional Bulgarian pancake)
What do u need?
600-700 gr white flour
30 - 40gr live yeast
1 cup Yoghurt 400 - 500 gr. 3.6 %
2 eggs
1-2 tbs oil
1 tbs salt
1 tbs sugar
butter or margarine for coating the already fried pancakes
How to do it?
Fill a small cup with warm water , dissolve the yeast , add a little bit of sugar and salt, leave it for 5-10 minutes u will see some bubbles on the top
poor the yeast in a bigger bowl
add yoghurt , mix with a fork
add the eggs
add oil
start adding little by little flour and watter ( the exact amount varies about 700 gr flour and 700 ml water )
add sugar and salt
mix with a mixer on a slow speed and u should end up with a dough looking like this
Leave it in a warm place for about an hour - should double its volume
bake at high temperature 5/6
thickness should about 5-6 mm (depends on the mixture and taste )
It is all about the bubbles :)
while still hot coat each one of the pancakes with little bit of butter or margarine
About the filling - I think white cheese , kashkaval , savory and chocolate are the best ...
